Easiest Lemon Cookies.
This recipe is as easy as it gets, and the results are delicious. These little cookies are a real crowd pleaser. I've been making them all summer and the boys love them.
I found the original recipe at allrecipes.com but I made a little alteration to the recipe. You can check out the original here.
Easy Lemon Cookies
1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup canola oil
1 tablespoon fresh lemon juice
1/3 cup powdered sugar
1. Preheat oven to 375 degrees F.
2. Pour cake mix into a large bowl. Stir in eggs, oil and lemon juice until well blended (I blend the batter by hand instead of bothering with the electric mixer). Drop teaspoonfuls of dough into a bowl or onto a small plate of confectioners' sugar. Roll them around until they're lightly covered. I drop 6 - 8 spoonfuls at a time to make things move along quicker. Once sugared, put them on an ungreased cookie sheet. I flatten them just a tad with a fork before putting them in the oven.
3.Bake for 6 - 9 minutes in preheated oven. The bottoms will be light brown, and the insides chewy. I get 3 - 4 dozens cookies, depending on how big my teaspoonful scoops are.
I hope you'll give this one a try, dear hearts. They're so quick and easy. A great go-to when the kids have friends stopping by or you need a quick little dessert to whip up. Super easy! I especially love them with freshly made iced tea in the summer months. I always make sure I have a box of lemon cake mix on hand just in case.
